Cilantro Lime Chicken Tacos

The other night I had the missionaries over for dinner and wanted to make something for them that I didn't think they'd get all the time. I found this recipe for chicken tacos and so I modified it just a little and it turned out sooooo delicious! I hope you'll enjoy it as much as we all did.

1 C cilantro
2T olive oil
3T lime juice
2 cloves garlic
1/2 jalapeno
salt and pepper to taste

Combine all ingredients and let chicken marinade in fridge for at least 30 min.
I fried the chicken up till browned on both sides. After it cooled a little I chopped it into bite size chunks. In the same pan I cooked red and yellow peppers, onion and some tomatoes. For additional toppings I had some jack cheese, sour cream, guacamole, and pineapple.
The elders taught me a great trick if you like your flour tortillas browned a little. You fold them in half and put them in the toaster! I was a little skeptical at first but it really works great. Just don't leave them in for too long!! Our smoke alarm went off. : )
